Sweet Simple Shortbread Cookies

This is how you make these sweet buttery shortbread cookies.



Makes about 25-30 Cookies

Ingredients:

  • 1 Cup UNSALTED soften butter

  • 1/2 Cups powdered sugar

  • 1 Teaspoon vanilla or almond extract ( I used almond)

  • 2 Cups all purpose flour

  • a pinch of salt

  • OPTIONAL:

  • add ins such as dried/fresh fruit, nuts, chocolate chips, etc.

  • I used dried cranberries!

  • plastic wrap



Instructions:

  1. Using a stand mixer, place on the paddle attachment. beat the butter until creamy. then add in the powdered sugar and mix until it is all cooperated. Scrape the sides in between!

  2. add in the vanilla and mix on medium. in another bowl add your flour an salt and make sure it is all cooperated. then turned down the speed to low and add in your flour mix slowly, little by little.

  3. beat it all until it is combined. then add in any add ins if you have any.

  4. remove the dough from the bowl and form into a disk. wrap it in plastic wrap and set in the fridge for at least 30 mins.

  5. after your dough has set preheat your oven to 350*

  6. on a lightly flour surface roll out your dough into 1/4 inch thickness and cut out with any cookie cutters of your choice and place of a prepared plan. using parchment paper or buttered/oiled pan.

  7. bake them until lightly browned 10-12 mins ( I did them for 12 and they came out perfectly and super soft!)
